oh nice, Optiplexes are awesome for homelabs! i started with one too. for initial containers, you def want Portainer. it makes managing everything so much simpler, especially when you're just starting out.
after that, Pi-hole is always a solid pick for network-wide ad blocking, super useful. or if you need some shared storage, a simple Samba container is pretty easy to get going. good luck!
