How to change your WiFi channel to fix slow or dropping internet

My wifi's been crawling lately, especially in the evenings, and someone suggested changing the wifi 'channel' since my neighbours are probably all crammed onto the same one. How do you actually do that, and how am I supposed to know which channel to switch to? Complete beginner with router settings here.
